Remember: For a dish to be truly gluten free, you need to make sure that all of your ingredients are gluten free. Also, if your home is not gluten free, be very careful with cross contamination issues.

Gluten Free Apple Puff Pancake


Growing up, my mom would make us this delicious meal. She never had a recipe, so I had to go hunting for something that was similar to her recipe. With a little tweaking, I turned that recipe into a yummy gluten free treat.

Ingredients:
3/4 C gluten free pancake mix
1/2 tsp salt
1 Tbsp sugar
4 eggs
3/4 C milk
1/4 C butter
4 medium to large apples (thinly sliced)

Topping:
1/3 C sugar
1 tsp cinnamon

Directions:

1. Preheat oven to 400 degrees.
2. Grease 2 8-inch pans; place 2 Tbsp butter in each pan
3. Place the pans in the oven until butter is melted; remove from oven
4. In bowl, combine sugar, salt, pancake mix, milk, and eggs until smooth
5. Arrange apple pieces into the two pans onto the melted butter
6. Pour batter evenly over apples in the 2 pans
7. Combine the sugar & cinnamon; sprinkle over top of the batter in the pans
8. Bake until puffed and golden brown (about 20-25 minutes)
