Remember: For a dish to be truly gluten free, you need to make sure that all of your ingredients are gluten free. Also, if your home is not gluten free, be very careful with cross contamination issues.

Confetti Fajitas

Confetti Fajitas


Ingredients:



  • 1 lb. skinless, boneless chicken breasts
  • 2 Tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp seasoning salt
  • 1/4 green pepper
  • 1/4 red pepper
  • 1/4 yellow pepper
  • 1/4 orange pepper
  • 1/4 red onion
  • 1/4 white onion
  • 1/4 yellow onion
(all ingredients are approximate based upon taste; can use 1 type of pepper and/or onion as desired)


Directions:
  1. Preheat oven to 400 degrees
  2. Thinly slice onion & pepper
  3. Cut uncooked chicken breast into small strips (I cut while still partially frozen)
  4. Place onions, peppers, chicken into baking dish & toss with oil and seasoning
  5. Cover with aluminum foil
  6. Bake for 1 hour, stir halfway through cooking


Serving suggestions:



  • Serve over a bed of lettuce with cheese, sour cream, tomatoes, and tortilla chips
  • Serve in warm tortilla with lettuce, cheese, sour cream, and tomatoes
  • Serve over a bed of rice

**These can be cooked at a lower temperature for a longer period of time. They also work well in the crockpot as a fix it and forget it type meal. I like to make extra as it heats up really well.
